Fruit is all grown on sandy soils over limestone. The grapes are harvested within a week of each other and added to the same tank for an extended co fermentation. Destemmed on arrival then crushed and fermented on skins for 6 weeks with native yeasts. We love orange wine and after years of trial and error, were thrilled to be making our own expression.
